Aldenor Ernesto de Lima was a Brazilian businessman and restaurateur who founded Canto da Peixada in Manaus in 1974, an establishment recognized as the oldest restaurant still in operation in the Amazonian capital. He became widely known in the region for his defense of Amazonian cuisine and his work promoting the typical dishes of northern Brazil, helping to establish the region's culinary identity over five decades of operation.

Under his stewardship, Canto da Peixada built a lasting reputation and accumulated notable stories, including preparing a meal for Pope John Paul II during his 1980 visit to Manaus. The restaurant's team cooked a boneless tucunaré stew for the pontiff, and the following day served grilled tambaqui ribs, an episode the restaurant preserved as part of its history.

Aldenor was remembered by his family and the restaurant as an honorable man, devoted father, husband, grandfather, and friend, and as a figure who left a legacy of valuing Amazonian gastronomy. He died on August 31, 2026, at the age of 88.
